mesclun greens with chopped egg, fried capers, local tomato, crispy leeks and honey lime vinaigrette.

 

seared local yellow fin tuna rare with peppercorn crust and sundried tomato pesto and lemon aioli.

 

fresh crabmeat with peppered papaya, cucumber, tomato, fresh basil and roasted lemon pepper cream.

 

cou-cou fried with boneless pork, white wine tarragon demi-glace and crispy onions.

 

 

 

main course:

 

jumbo shrimp (guyana) spice rubbed and grilled with prosecco fresh basil hollandaise and roasted garlic.

 

rack of lamb (new zealand) grilled and oven roasted with herb breadcrumb crust,

 roasted pepper tapenade and balsamic reduction syrup.

 

 beef tenderloin (u.s.a) medallions grilled with with pinot

 noir demi-glace and blue cheese butter.

 

fresh market catch; with butter poached crabmeat and shrimp in sancerre buerre

blanc.

 

local chicken breast pan seared and oven roasted filled with mushroom duxelle and

foie gras with chardonnay demi-glace.
